GRILLED HALLOUMI SALAD WITH WHITE BALSAMIC VINAIGRETTE

I am simply a huge fan of salads. I can always tell how good a restaurant is going to be if they can pull off a solid salad. Every salad starts with a good dressing and when you have that packed down the rest is very easy! I usually shop most of the time at Cheese Boutique and visit my good friend Afrim. We’re Balkan kids, what can I say!

Ingredients:

Castlefranco radicchio
Endive (wedges)
Arugula (not hydroponic)
Lolla Rossa or red leaf lettuce
Dill
Mint
Basil
Pomegranate
Gooseberries
Black grapes (sliced)
Baby radish (sliced)
Kosher salt
Fresh black pepper

Dressing:

Yield 2 litres.  Trust me you will be putting it on every salad you make 🙂

250 ml white balsamic vinegar
3 tbsp honey
1 litre canola oil
80 mg olive oil
5 cloves of garlic (chopped)
150 ml lemon juice
